Egg roll in a bowl! It’s as fun to eat as it is to say. This recipe inspiration came to me during a time when I was feeling lackluster about our typical go-to dinners. Work was busy, life was moving fast, and dinner just wasn’t feeling exciting. The idea for egg roll in a bowl was so inspiring — deliciously seasoned meat, crunchy cabbage, savory sauce, sign me up. Not to mention, this recipe is a great way to eat a ton of vegetables without feeling like you’re eating something boring and unsatisfying. This was an instant classic in our house, and I have a feeling it’ll be the same in your house too.

What is egg roll in a bowl? Egg roll in a bowl is a delicious stir-fry dish consisting of cabbage and ground meat, sauteed in a rich and savory sauce. It’s called this because it mimics the filling of an egg roll, without the fried wrapper, making it a healthier choice for when you’re craving a delicious egg roll. 

Is egg roll in a bowl good for you? Yes, this is a healthy meal choice, consisting of just vegetables and protein in a sauce. However, you can make egg roll in a bowl even healthier with a few choices. For example, choose a low-fat meat such as ground turkey for a lean dinner. You can also choose to serve egg roll in a bowl over rice, or skip it for a low-carb option. 

What other vegetables can I use in this recipe? If you don’t love cabbage or are looking to add additional vegetables to this recipe, you certainly can. Almost any vegetable will be delicious stir-fried with the protein and veggies in this recipe. Some of my favorite additions are: 

  • Broccoli

  • Red bell pepper

  • Snow peas

  • Cauliflower

  • Kale

  • Scallions 

What type of meat do you use in egg roll in a bowl? My preferred meat to use in egg roll in a bowl is ground pork or ground turkey, depending on whether I want to have a more decadent or lean dinner. Ground pork is deliciously fatty, adding a richness to the dish, while ground turkey is a great canvas for the Asian flavors featured in this recipe. Almost any ground meat will go great in this recipe, including ground beef, chicken, or even crumbled tofu.

How to tell when the cabbage is done cooking? I prefer the cabbage in this recipe to be sauteed, but still a bit crunchy. The best way to test if the cabbage is done cooking is by taking a bite and seeing if it’s cooked to your desired doneness. Some people prefer their cabbage a bit softer, some crave the texture of crunchy, barely cooked cabbage. A safe way to start is by cooking the cabbage for about 5 minutes, tasting it, and cooking longer if desired. 

Can I use any other sauces in egg roll in a bowl? Yes, this recipe is a great opportunity to try out different asian sauces or condiments and develop delicious flavor. Some of my favorite choices to add to this dish are sriracha or gochujang for heat and complexity. Other options to consider are oyster sauce or fish sauce for a bit of umami and saltiness. 

How long is egg roll in a bowl good for? Egg roll in a bowl is best enjoyed served right away, as the cabbage will retain its crunch when it hasn’t been soaking up the sauce for an extended period of time. With that being said, it’s safe to eat egg roll in a bowl for up to 3 days stored in the fridge. 

How to serve egg roll in a bowl? I prefer to serve egg roll in a bowl over steamed rice, to soak up the delicious sauce and add a bit of carbs to the meal. This is a great, weeknight-friendly option too, as you can easily use frozen or steamed-in-the-bag rice for a quick fix.

Egg Roll in a Bowl

Egg roll in a bowl is a delicious one-pot dinner that comes together with only a handful of ingredients and in 15 minutes. This healthy meal is sure to satisfy all of your egg roll cravings!

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground meat — option for ground turkey, pork, beef, chicken, or tofu
  • 12 oz shredded cabbage (coleslaw mix)
  • Optional — top with sesame seeds
Sauce
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp hoisin sauce
  • 1 tsp garlic powder
  • 1 tbsp fresh grated ginger

Instructions

  1. Heat a large skillet over medium heat and add olive oil. Add the ground meat to the skillet and sauté until browned and cooked through, about 10 minutes.
  2. Meanwhile, mix the sauce in a small bowl.
  3. Once the meat is done browning, add the shredded cabbage and sauce, and stir-fry until the cabbage becomes tender and the sauce thickens, about 3-5 minutes.
  4. Optional — top with sesame seeds.

Notes

Tip: If using a fatty meat such as beef or pork, remove the excess fat after browning and leave only 1-2 tablespoons in the pan.
